蘋果切丁機有兩個主要動作：推料運動與切割運動。推料運動時用推桿將切割槽內的肉料向前推向刀柵區(qū)，切割運動時將肉料切成肉丁。

當前門關閉，測壓機構完成測壓運動時，相應的二個感應開關動作，接通控制電源，油泵工作，靈推桿快速前進擠壓肉料，直達到預設的預設值，推桿變?yōu)槁偾斑M，刀柵及切刀停止切割，同時推桿帶動推塊快速返回直回到起始點，推塊下方的另一感應開關，關閉油泵，推塊停在遠處，完成一個工作周期，再次加料，準備下一次切割。

主電機經減速器帶動主軸運動，主軸上的撥叉帶動上刀柵，下刀柵作上下及左右往復運動，將推塊推出的果蔬切割成條狀，再由主切刀將果蔬切割成果蔬丁。
