切丁切塊機主要適用于脫水蔬菜、速凍蔬菜加工廠及食品醬菜行業(yè)加工各種根、莖類蔬菜成正方體及長方體形狀。肉類切丁機主要有底座、殼體、撥盤、立刀、絲刀體、橫切斷刀體，傳動系統(tǒng)和電器控制系統(tǒng)組成。切丁機可以分為一次性切成丁的切魚肉丁機、一次性成絲的肉絲肉片機、切軟骨的雞鴨帶骨切丁機、熟肉切片機。

(1)切丁機，應將被切物料洗凈去雜，如果被切物料混有沙石與泥塊，刀刃口與刀板容易損壞和磨鈍。物料切割直徑應不超過100mm，如果大于此直徑須分塊。
